[VEGAN] CREAMY CURRY CHICKPEAS WITH RICE
A friend of mine recommended this recipe, and it has now become my favorite dish. It’s easy to make and takes less than 20 minutes to cook.
1 clove of garlic
2 tbsp Curry Powder/Paste
1/2 red chili
1/2 red onions
1/2 tsp black pepper
1 can of chickpeas
(Optional) grated ginger
(Optional) Can add yogurt, water, or coconut milk
Heat olive oil in pan. Add garlic, onions, grated ginger, curry powder (or paste) and add onions, peppers and coconut milk. Once heated, add chickpeas and simmer over medium/low heat. Let it warm up, and you’re all done. Sprinkle paprika on top along with some coriander if you prefer. Can serve with rice and avocados.
